Our distinctive blend is crafted with precision and care, starting with gentle pressing in a 400 L wooden basket hydraulic press, ensuring maximum flavor extraction without over-pressuring the grapes, yielding varying percentages for each varietal: Cabernet Franc (58%), Lambrusca di Alessandria (63%), Nebbiolo (65%), and Grenache (67%).
Each varietal undergoes a meticulous fermentation process tailored to its characteristics:
Cabernet Franc ferments in a 900 L egg-shaped Flextank with controlled temperatures, undergoing manual push-downs and a 12-day skin contact for a smooth malic-lactic transformation in barrels.
Lambrusca di Alessandria sees a 15-day skin contact in a 1,000 L square tank, fostering a spontaneous malic-lactic transformation post-fermentation.
Nebbiolo benefits from a unique combination of barrel and tank fermentation, with 16 days of skin contact to enhance its complex profile.
Grenache is kept in a 1,000 L tank for 10 days of skin contact, ensuring a vibrant expression of the varietal.
Aging is carefully curated for 11 months, employing a mix of new and used medium toasted French oak barrels for Cabernet Franc, a balance of intense and neutral barrels for Lambrusca di Alessandria, and neutral barrels for both Nebbiolo and Grenache, enriching the blend's depth and complexity.
Racking is performed post-fermentation and post-malolactic fermentation, followed by a blend at the end of aging. The wine is clarified with a pea-based product, ensuring a refined finish without tartaric stabilization and filtered between 4.0 and 8.0 microns for a pristine clarity.
