Vino Blanco 2021 is a vibrant blend of 60% Chardonnay and 40% Colombard from Valle de Guadalupe, crafted by an innovative winemaker to highlight the freshness of early-harvest grapes. Aged in French oak and Flextank containers, it features a pale straw color and a bouquet of jasmine, lemon custard, and herbaceous notes. The palate is a blend of bruised apple, honey, and Meyer lemon, finishing strong with great acidity and a luscious mouthfeel. Perfectly pairing with a variety of dishes, such as oysters, caesar salad and bruschetta, Vino Blanco epitomizes summertime sipping and the excellence of Valle de Guadalupe’s winemaking.

Nose
Jasmine, white tea, white flowers, lemon custard, thyme, sage, flint. Heavier on the herbaceous/earthy notes than fruit forward.
Palate
Bruised apple and pear, almost baked. Notes of honey, molasses, meyer lemon, lemon zest.
Finish
Strong finish, with a great acidity that contributes to a medium to long finish that is round and luscious. -

This wine is a result of meticulous attention to detail, beginning with the direct pressing of whole clusters in a pneumatic press to preserve the essence and purity of the grapes. The blend consists of 60% Chardonnay from the youthful Rancho la Prieta and 40% Colombard from the seasoned Viñedos Bibayoff, highlighting the diversity of the region's terroir.
The Chardonnay and Colombard varietals are harvested and vinified separately, with a keen emphasis on achieving a full expression of freshness by picking the grapes at early maturity. Fermentation begins in closed 500 L Flextank containers, where temperatures are carefully controlled to initiate a drop to about 11 °C. This phase is crucial for retaining the grapes' vibrant aromatic and flavor profiles. As fermentation progresses, the wine is transferred to French oak barrels, continuing the process and enriching the wine's complexity with subtle woody notes.
Both varietals benefit from the natural yeasts present in the vineyard, with an initial fermentation sparked by autochthonous microbiology. Following the alcoholic fermentation, the wine is carefully racked a couple of times, always returning to the barrels for lees stirring. This technique enhances the wine's body and texture, culminating in a three-month aging period in the wood, which concludes after the malolactic transformation.
The blending of Chardonnay and Colombard marks the final step before bottling, with the wine passing through a 3 to 5 µm filter to ensure clarity without compromising its intricate flavors and aromas. This detailed approach from selective harvesting to the thoughtful integration of each varietal into the final blend showcases our dedication to crafting a Vino Blanco that reflects the freshness, complexity, and elegance of Valle de Guadalupe's wines.
